Welcome back to my bi weekly column.
First I thought I’d share a little of recipe for the up coming Thanksgiving holiday. The Italian I just got back from our local market and of course they have all the holiday food ready to go including all these new versions of Betty Crocker potatoes! Well they are not Aunt Anita’s Potatoes! So I Thought I’d share with you the recipe for Aunt Anita’s Potatoes.
First, a little history about Aunt Anita’s Potatoes, we always assumed that Anita came up with this recipe but I guess it was probably just passed on during the Mormon monthly Wednesday Social for women called Home Making. At these socials they would serve Funeral Potatoes which are a traditional Latter-day Saint (Mormon) casserole dish that originated in Utah. Funeral potatoes get their name from commonly being served as a side dish during traditional after-funeral dinners. Funeral potatoes are often served in Utah and other areas with a large Latter-day Saint population usually during social gatherings such as potlucks, .
The dish usually consists of hash browns or cubed potatoes, cheese (cheddar or Parmesan), onions, sour cream, cream soup (chicken, mushroom, or celery) or a cream sauce, and is topped with butter and corn flakes or crushed potato chips. Other variations include cubed baked ham, frozen peas, or broccoli florets. Anita’s version I remember was scalloped potatoes mixed in with chives and lots of love.
According to Wikipedia During the 2002 Winter Olympics in Salt Lake City, one of the souvenirs included a pin featuring an image of funeral potatoes.
So here is the recipe passed down from Aunt Anita:
Recipe makes one large casserole dish full of this but don’t worry it goes very fast.
6 to 8 Large Potatoes
2 cans of Cream of Chicken Soup
2 cups of Sour Cream
1 cup of grated Cheddar Cheese
½ cup butter, melted
1/3 cup onions, chopped
2 cups corn flakes, crushed
2 tablespoons of butter melted.
1 grouping of chives chopped up
Boil Potatoes with skins for 20 mins (Slightly tender) While the potatoes boil combine soup concentrate, sour cream, cheese, ½ cup of butter and onions.
Now then take out the potatoes and run under cool water to cool them down. Once cooled, skin and slice into scallops of potatoes. Place them on the side.
On the bottom of the casserole dish place a layer of potatoes and then add a layer of the mixture. Then place another layer of potatoes then the rest of the mixer on top.
In another pan take the 2 tablespoons of butter and melt. Add the corn flakes. Coat the corn flakes with butter then remove from stove. Cover top of casserole with cornflake mixture.
Bake at 350 for 30 minutes
Well Go and impress your friends with this recipe they will love it and you will be hooked.
So last Sunday I had a wonderful time at Purr’s Home for the Holidays Bake sale. Barbie wanted to do something for a food bank during the holidays and since I already work with the Seniors over in West Seattle I thought they would be a great group to donate to this year.
Home For The Holidays at Purr was a very fun event. We were honored that so many great people brought baked goods to donate. We had lots of Cookies of all different kinds, Brownies, and cakes. We even had a Snohomish County Fair blue ribbon winner for the apple pie. Edith Butterfield donated it and it ended up going for $45.00 dollars to the highest bidder. Edith brought over to the house early and boy did it smell amazing!
We ended up making around $400.00 for the West Seattle Senior Center Food bank. They feed 100 seniors during the holidays that have fixed income and can’t afford extras of the holidays. Felt good.
My holiday show start this weekend at Homo for the Holidays. Then I’m part of a wonderful night at Open Circle Theater in Belltown. Come to the Judy Garland Christmas show and stay for the Sylvia and Tor Holiday Cabaret! Oh definitely don’t miss our Christ-takular Christmas Bacon Strip on December 4th at Rebar.
