4 course sit down dinner:
First Course: Symphony of Smoked Salmon Tartar, Quail Confit, Salsify Cream and Micro Chards
Vegetarian: Candy Stripe Beet Tartar, Shiitake Confit, Salsify Cream and Micro Chards
Second Course: Maple Lacquered Smoked Duck Breast, Italian Cous Cous, Seckel Pear, Toasted Pecans Cranberry Gastrique
Vegetarian: Smoked Portobello Mustard Greens Roulade, Italian Cous Cous, Seckel Pear, Toasted Pecans Cranberry Gastrique
Entrée Course: Filet Mignon, Potato Leek Torte, Chanterelle Mushrooms, Cippolini Onions and Herb Wine Jus
Vegetarian: Ravioli of Heirloom potatoes, Grappa soaked tomatoes, Chiffonade squash, Mascarpone cheese and Truffle broth
Dessert: a special Black & White (with a Twist!) Dessert created by the Sheraton Pastry Shop:
Frozen Guava Soufflé with a Banana Macadamia Ganache in a Chocolate cone
